Grape harvest: Negroamaro harvested at the end of September in a slightly over-ripened state when about 15-20% of the berries are dried or raisined. Vinification: Obtained from 35 year-old vines trained on a spurred cordon espalier system with a low number of buds per plant and a very low production per hectare. On receipt at the winery, the grapes are only destemmed and not crushed in order to break the dried berries as little as possible. During maceration, they undergo carbonic maceration in order to increase the sensation of dried fruit in the wine. Cold pre-fermentative maceration in thermo-conditioned steel vats in order to extract as much as possible of the varictal aromas, followed by traditional maceration with simultaneous alcoholic fermentation at a controlled temperature for 10-15 days and periodic pumping over. Racking and refinement in stainless steel until malolactic fermentation is complete. Passage in oak barriques for a further 12 months before bottling. Continued refinement in bottle for a further 3 months before release.

Sensory characteristics: Vivid and crystalline red with a purple hue, complex and persuasive with a very modern nose. Fresh fruitiness, small red berries from the undergrowth with a vanilla and slightly bakamic undertone, reminiscent of the Mediterranean scrub. Integrated and pleasant tertiary aromas.
Good body, fat, enveloping, velvety and balanced. Succulent in the finish with a sweet fruity end.
