Grape harvest: First week of September for the Primitivo, first week of October for the Nero di Troia.
Vinification: The harvested grapes reach the winery, where they are destemmed and then conveyed into stainless steel tanks maceration. The alcoholic fermentation is started thanks to the inoculation of selected yeasts and maintained at a temperature of 26-27°C. At the end of fermentation the grapes are crushed and the wine obtained is placed in steel tanks where it stays for 12 months, then it is blended and bottled and continues its aging in the bottle for three months before being released on the market. Pairings: Red meats and mature cheeses.
Sensory characteristics: Ruby red with garnet reflections.
The nose presents itself with fractured notes, myrtle and morello cherry with hints of rosemary and nutmeg. It opens in balsamic scents of Mediterranean scrub, prune and cherry jam.
The palate is full, enveloping and velvety. Tannic and with good acidity, notes of red fruit return. A round if dry wine, with a persistent finish.
